Chocolatey, Coconuty, goodness...



Okay..these cookies are seriously good. I saw the recipe for chocolate coconut bars on the back of a brown sugar bag...and the coconut part got me. I don't know about you, but I never try recipes on the backs of packages...I'm always way to hesitant to believe it could possibly taste good. I mean, its printed on the back of package for goodness sake, and it sort of just seems like an advertisement for the brand, use C&H brown sugar, mix with C&H flour, oh yes, and C&H EVERYTHING..you know what I mean. But I gave these a go, and holy cow! So GOOD! they're chewy and delicious on top, chocolate goodness in the middle, and a shortbread crust. Does it get any better?!

Chocolate Coconut Bars
yields approx. 3 dozen bars

1 1/2C flour
1/2C packed dark brown sugar
1/2C (1 stick butter)
1/4t Salt
1 1/2C milk chocolate or semisweet chocolate chips
2 Eggs
1C packed brown sugar
1t Vanilla extract
2T all purpose flour
1/2t baking powder
1/4t salt
1 1/2C flaked coconut

preheat oven to 375

Grease a 13x9 baking dish. In a large bowl using your fingers or a pastry cutter, combine first four ingredients until crumbly. Pat into baking dish to make a thin crust, bake for 10 minutes. Sprinkle chocolate chips over the hot crust; return to the oven for about 1 minute to soften. Spread chocolate evenly over crust. In a medium bowl, beat eggs until thick and lemon colored. Beat in sugar and vanilla. Combine flour, baking powder and salt and beat into sugar mixture. Stir in coconut. Spread evenly over chocolate layer. Bake 15-20 minutes. Cool in pan and cut into bars!

Those look so yummy, your dad would love them. We should make some on Friday for Maileys birthday to go along with her blue, orange and pink cake...ha she is so funny. Does she still ask for a pink pig as well? PapaNana
